Every family has 'Grandma's Goulash' or similar dish, this is my Mom's version. Very simple to throw together and it always gives guests the feeling that they are truly part of the family! Great for a pot-luck or just a quick family meal.
2 pounds lean ground beef
2 pound box large elbow macaroni
2 large (28 ounce) cans stewed tomatoes
1 large onion, diced
1 green bell pepper, diced
3 ribs celery, sliced thin or diced
4 to 5 cloves garlic, minced
32 ounces tomato juice or V-8 type juice
1 tsp Cavendars or other all purpose Greek seasoning
1 tsp kosher salt
1 tsp fresh ground pepper
2 to 3 cups grated Colby Longhorn or Co-Jack cheese
Cook Macaroni as per package directions in salted water to 'al-dente' stage, even slightly underdone. Drain and rinse in cold water to stop cooking. This will keep the pasta from becoming mushy during baking.

Brown meat, drain and rinse. Add onions, peppers, celery, seasoning and tomatoes to meat. With your hands or with a potato masher, break up the tomatoes.

Add noodles and meat mixture together. Stir in juice until mixture is quite wet but not like a soup, just good and juicy.

Pour into large casserole, cover with lid or foil and bake in a 350 degree oven for about 45 minutes, uncover, top with cheese and continue baking for 15 more minutes or until cheese is bubbly and turning brown.

Cool on rack about 20 minutes to make serving easier. Great with crusty bread rolls and a crunchy green salad.

Create your own version by adding other veggies, hot chilies, different kinds of pasta or even ground pork or chicken!
