Mom's Jambalaya

This has been a family favorite since we lived in Louisiana. I got the recipe from a man who used to win the Jambalaya Festival contest in Gonzales, LA every year.
2 pounds of chicken, any pieces
2 cups of uncooked rice
1 pound of ground beef
1 pound of skinless smoked sausage
2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. cayenne pepper
1/2 tsp. garlic powder
1 medium onion, chopped fine
1 bell pepper, chopped fine
3 stalks celery, chopped
Cover chicken pieces with water in a large pot. Boil until tender, or about half an hour. Remove chicken and cool. Keep the broth. Take chicken from the bones and chop into bite sized pieces. Set aside. Place broth in another container. In the same large pot, brown ground beef. When nearly browned, add bell pepper, onion, and celery. Continue to cook for 10 minutes, then add rice. Cut sausage into 1/2 inch slices, and add to the pot. Add chicken pieces and the spices. Add water to broth if needed to make 4 cups liquid. Stir well. Bring this to a boil. Turn heat down to low. Cover and cook for 15 minutes, or until rice is tender and liquid is absorbed. Serve with warm French bread and a salad. Serves 6 to 8.
