Mom's Mac & Cheese

My kids love this recipe. Mom always served it at all family gatherings. Now I do as well, and even add diced ham etc. to make a one dish meal that is fast and has little fuss. Will soon become a family staple at your gatherings as well.
RECIPE INGREDIENTS
1lb box macaroni cooked eldante (shells,spiral, elbow etc)
1/3 box velveeta cheese Cut into small pieces
1 stick margerine (melted)
1 can cream corn (can use 2 my kids like 2 in thiers)
enough milk to just come to bottom of top macaroni in baking pan
two cups shredded cheese (which ever you like best tho we use the shredded 'taco' cheese that has a couple different kinds in it) to put on top of cassarole
salt and pepper to taste
DIRECTIONS
preheat oven to 350


coat small roaster pan (one with a lid or use foil)with non stick cooking spray set aside


cook macaroni as directed on package just to eldante (not completely done) drain and set aside


in a bowl mix melted butter, corn and cut up velveeta cheese,(very small pieces) and salt and pepper


add macaroni and mix well


pour all this into the roaster and add milk till it just comes to the bottom of the very top layer of macaroni. (no need to stir it)


cover with lid or foil and bake at 350 for 30 mins to melt cheese and let macaroni soak up the milk, remove from oven and stir once to blend the melted velveeta with the noodles, add the shredded cheese on top and return lid and put back in over for another 15 mins, remove lid (foil) and bake a final 10- 15 mins till top cheese is golden brown. Let sit to cool a few mins before serving


To make this a one dish meal simply add diced ham,sausage, or even crispy bacon into the bowl with the margerine,corn,velveeta etc. before adding macaroni and cook as directed.


For larger gatherings just double recipe (add 15 mins cooking time)
