Mom's More Than Macaroni and Cheese

This is my 85 year old Mother's signature dish. It is my favorite macaroni and cheese and she still makes it for me for special occasions. The combination of the pimento, peppers and parsley is amazing.
RECIPE INGREDIENTS
16 oz medium macaroni, cooked al dente in 1 tablespoon olive oil and 1 teaspoon salt and drained
1 medium jar chopped pimentos drained
1 whole small green pepper diced
4 tablespoons fresh chopped parsley
10-12 slices thin sliced deli boiled ham
1 1/2 cups grated sharp cheddar cheese
1 1/2 cups shredded or cubed Velvetta cheese
Salt and pepper to taste
3/4 sticks butter softened or cubed
1 cup half & half
DIRECTIONS
Preheat oven to 350 degrees.


Spray cooking oil on a 9x12 pan.


Mix both cheeses together, reserve one cup for topping. In a separate bowl, mix pimentos, green pepper, parsley, salt/pepper, butter and cooked/drained macaroni together.


Put half of the macaroni mixture into the pan.


Cover macaroni mixture with half of the ham slices.


Cover ham with the rest of the macaroni mixture.


Put remaining ham slices evenly over macaroni mixture. Cover ham with remaining one cup of cheese.


Pour half & half over top.


Bake approximately 45 minutes, until top is brown and bubbly.

WAKE UP !!!!
If you make this recipe as the directions state.....the majority of the cheese is never added to the macaronic mixture. The only cheese you will put in this dish is the reserved one cup you put on the top before baking. PROOFREAD , people!!!
