MOM'S POTATO SALAD

My Mom's potato salad recipe is very old and simple, but it is delicious and a family favorite.
RECIPE INGREDIENTS
1 small red onion chopped finely
3 tablespoons of apple cider vinegar
3 tablespoons of extra virgin olive oil
2 cloves of garlic
8 red skinned potatoes
5 eggs
salt
pepper
1/2 cup of mayo (regular or reduced fat)
DIRECTIONS
Place peeled, quartered potatoes and peeled garlic cloves in a large pot, cover with cold water and salt to taste.


Boil till they can be pierced with a fork, about 20 minutes. When they are ready, drain and set aside to cool. Discard garlic cloves.


Place eggs in a pot and cover with cold water. Cover and bring to a boil. As soon as eggs come to a boil shut off heat and let sit for 10 minutes. After 10 minutes, run eggs under cold water and peel. Chop and set aside.


Combine onions, vinegar, and olive oil in a small bowl.


In a large serving bowl combine all ingredients and fold together. Season with salt and pepper.


Can be served at room temp or cold. Simple but delicious.
