This is great left over dish, potatoes being cooked for potato salad or mashed potates save some for breakfast. Corn on the cob for dinner, with a few left over. Perfect!
2 ears of corn cooked and removed from cob(can be boiled, steamed, microwaved, or my favorite without husk roasted on the grill)
1 medium onion, diced but not real fine
4 medium potatoes, cooked and diced into 1" cubes (can be boiled, microwaved or my favorite steamed with the skins on)
4 slices of bacon, cut into pieces (about 10 to a strip)
salt and pepper to taste, if not for breakfast consider also adding paprika and garlic
In a large skillet that has a lid, on med heat cook the bacon. Remove the bacon from the pan, set aside. You may wish to remove some of the bacon grease, but you do need some to finish the dish. (save in a covered bowl in the refrigerator for future dishes like potato soup) Add onions with just a bit of salt and cover pan. Allow to cook, stir every so often till onions are just starting to brown. Add the potatoes and corn, stir, add salt and pepper, cover and cook till everything is heated through. You may need to turn the mixture, a bit of crisp on the potatoes is wanted. Serve with a fried egg on top or top with green chili as desired.
