- For Squares:
- 1 cup untoasted muesli
- 1 cup flour
- 1 cup rolled oats
- 2/3 cup unsweetened flaked coconut
- 1 cup finely chopped dried apricots
- 1/2 cup packed dark brown sugar
- 3/4 cup butter
- 2 tablespoons corn syrup (dark or golden)
- 1 large egg, lightly beaten
- For Yogurt Topping:
- 2 tablespoons plain yogurt
- 1 1/2 cups confectioners' sugar, sifted
TO MAKE SQUARES: Preheat oven to 350 degrees F. Lightly grease a 9 or 10 inch square pan. In a large bowl combine the muesli, flour, oats and coconut. Add the apricots and dark brown sugar and stir in evenly. Melt the butter and corn syrup together in a small pan.
Pour over the dry ingredients, add the lightly beaten egg and mix well. Press into the prepared pan. Bake for 25 minutes. Allow to cool in the pan.
TO MAKE YOGURT TOPPING: Beat together the yogurt and confectioners' sugar until smooth.
Spread over the muesli mixture and cut into squares. Store in an airtight container.
