Mushroom, Peas and Potato Platter

Veggie appetizer platter
Peas 2 Cups
Potatoes 4 large white
Mushrooms (White) - Medium Size
Onions - 1 Small
Red and Yellow Peppers
Chili Sauce
Red Crushed Pepper
Unsalted Butter
Canola Oil
Cumin seeds
a. Mushrooms:

a. Wipe the mushrooms with paper towels.. I don’t wash them but I just clean them well.

b. Cut the mushroom stems and just keep their top heads

c. Heat the Wok and add 1/4 teaspoon of butter and 1/2 teaspoon of oil..I go very low with the Butter to keep it healthy.

d. Add 1 tablespoon of Chili Sauce and add the mushroom to it..I would do them till their outer surface is little brown and crispy. Add a Lemon Juice to Mushrooms. Don’t over cook them

e. Keep them aside

b. Potatoes

a. Wash and Peel the potatoes and slice them in round shape. Don’t make very thin or thick slices..Thin Slices will boil quickly and thick will take long time and will remain raw after cooking.

b. Boil 4-6 Cups of Water and add 2 Teaspoon salt to it. Wait for the water to come to boil.

c. Put the Potato slices in the boiling water. Keep it uncovered and let them boil for about 3 mins. I will never boil for longer as it will make them too soft.

d. Drain the water and keep them aside.

e. Heat a flat pan and put little oil(1 teaspoon) to it..Add little salt and turmeric to it. Put the drained potatoes to it and try to overlap them. Cook them till their edges become brown and crispy.

f. Once done, keep them aside.

c. Peas

a. Heat 1/2 teaspoon butter to a wok.

b. Add little cumin seeds to it. And then add onions..Add little salt. I will cut the onion in the form of rings. Cook them till they are kind of transparent. Don’t mesh them. Add Peas and cook till they are tender. Add the slices of Pepper. I don’t cook Pepper for long and keep them as crisp.. They taste good that way.

d. Assembly.

a. Take a flat dish and put the peas in the center.

b. Put Mushrooms on the side of the peas.

c. Put the layer of Potatoes on the side of the Mushrooms..

d. Garnish with Cilantro.

I hope you all like it. I took this recipe from some cook book and then edited further. I tried three times and it was a big hit in the parties.
