Mushroom Sloppy Joe

  • 1 teaspoon vegetable oil
  • 1 pound fresh white mushrooms, chopped (about 6 cups)
  • 1 can (15 1/2 ounces) sloppy Joe sauce
  • 4 hamburger buns, split and toasted


In a large skillet (preferably nonstick), heat the oil over medium heat. Add the mushrooms; cook, stirring occasionally, until browned and the liquid has evaporated, about 8 minutes. Stir in the sloppy Joe sauce. Cook the mushroom mixture until thick, about 3 minutes. Spoon 1/2 cup of the mushroom mixture onto the bottom of each bun; place the remaining bun half on top.
