This is my favorite Irish soda bread that my mother made all the time. It's easy and tasty. I like to add more raisins, and put butter on a hot slice from the oven.
1/2 stick of butter
1/2 cup of sugar
1 egg
2 1/2 cups of sifted flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 1/2 cups sour cream (1 cup of milk and 1 tsp of vinegar for sour cream substitute)
1 cup raisins
Mix by hand or beater: 1/2 stick butter, 1/2 cup of sugar and 1 egg. In separate bowl mix: flour, baking power, salt and baking soda. Gradually mix flour mixture with egg mixture, alternating with sour cream till all the flour mixture is mixed and dough is soft and slightly sticky. Mix in raisins. Grease and lightly flour one regular size box pan or two smaller loaf pans. Bake at 350 for 50-60 minutes. Test with toothpick. While hot from oven, sprinkle a little sugar over top of bread if desired.
