I call this a no recipe recipe because you can easily change the amounts of the ingredients to serve four people or a whole crowd.
equal amounts of chicken, shrimp, and chorizo sausage
1 or 2 - 14 oz can diced fire roasted tomatoes
1 - large onion, sliced
3 to 5 cloves of garlic, minced
cayenne pepper (optional)
1-2 tbls extra virgin olive oil
salt and pepper to taste
for 4 servings, use about 1/2 pound of boneless skinlees chicken breast cut into bite size pieces, 1/2 pound peeled and deveined shrimp and 1/2 pound of sliced, fresh chorizo (keilbasa can be substituted).

heat oil in a large skillet on medium high heat. add onions, chicken and sausage, cook until alsmost done with chicken still slightly pink.

stir in tomatoes. one can of tomatoes should be enough but you can use two if you like more sauce or choose to use more meat. lightly season with salt and pepper. add garlic, turn heat down, cover and simmer until chiken is cooked through.

stir shrimp into the pan and cover with sauce. cover and cook for 1-3 minutes until shrimp is done.

add cayenne (if desired), season to taste with salt and pepper. serve over rice.

other optional ingredients: sliced bell pepper and chopped celery can be added when you cook the onions.
