Non-Dairy Mac and Cheese

If you have a dairy allergy and don't want to spend the money on boxed mixes, this homemade mac and cheese is easy to make and very tasty. Even non-allergic friends will enjoy this dish!
RECIPE INGREDIENTS
Half stick unsalted margarine (or other non-dairy margarine)
Seven slices Tofutti cheddar or Mozzarella cheese
2-4 T. rice milk (or soy) or as needed
Pasta of choice
DIRECTIONS
Cook pasta according to package directions. While pasta is draining, melt butter and cheese in saucepan; add milk. Stir until thickened and then add pasta. Sauce will thicken as you cook.


This reheats well and stores for up to a week in the fridge. The sauce is usually thicker after storing in the fridge.
