Oatmeal & Fruit Scones

Yield:  12 scones
RECIPE INGREDIENTS
2/3 cup butter, melted
1 egg
1/3 cup milk
1 1/2 cups flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon cream of tartar
1/2 teaspoon salt
1 1/4 cups quick oats
1/2 cup chopped dried fruit of your choice
Shortening (for coating pan)
DIRECTIONS
Preheat oven to 350 degrees F. Grease a cookie sheet with shortening.


Combine flour, sugar, baking powder, cream of tartar, salt, oats and dried fruit in a large bowl. In another bowl, combine melted butter, egg, and milk. Stir the egg mixture into the dry ingredients, then stir in the dried fruit until all is just moist.


Shape into 2 balls (by hand) on a floured surface and flatten down to 2 (1 inch thick) rounds. With a spatula, place 3 inches apart on the greased cookie sheet. Cut each round into 6 wedges (without separating them) with a floured knife).


Bake for 30 minutes or until golden on the bottom. Serve warm with your favorite jam & butter.
