Oatmeal & Fruit Scones
- Shortening (for coating pan)
- 1 1/2 cups flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon cream of tartar
- 1/2 teaspoon salt
- 1 1/4 cups quick oats
- 1/2 cup chopped dried fruit of your choice
- 2/3 cup butter, melted
- 1 egg
- 1/3 cup milk
Preheat the oven to 350 degrees F. Grease a cookie sheet with shortening.
Combine the flour, sugar, baking powder, cream of tartar, salt, oats and dried fruit in a large bowl. In another bowl, combine the melted butter, egg and milk. Stir the egg mixture into the dry ingredients.
Shape into 2 balls on a floured surface and flatten down to two 1-inch-thick rounds. With a spatula, place 3 inches apart on the greased cookie sheet. Cut each round into 6 wedges (without separating them) with a floured knife).
Bake for 30 minutes or until golden on the bottom. Serve warm with your favorite jam & butter.
