O'Bie O'Brien's Irish Potato Pudding

Our brother in law, O'Bie O'Brien, always makes the family get-together St. Patrick's Day meal and this potato dish is always a favorite. It is easy and even good if there are leftovers.
RECIPE INGREDIENTS
2 bags (20 ounce each) Simply Potatoes Hash Browns, room temperature
1/4 pound finely sliced bacon and drippings
1 cup milk
1/2 stick butter OR margarine
1 onion, finely chopped
black pepper and parsley flakes, to taste
1/4 pound corned beef from deli, chopped
1/8 cup Cream of Wheat
3 large eggs, beaten
1 teaspoon Accent (optional)
1/4 cup Dubliner Irish cheese, shredded (optional)
DIRECTIONS
Preheat oven to 400 degrees.


Fry bacon and leave bacon and drippings in pan. Add milk, butter OR margarine, onion, pepper and parsley flakes to bacon and drippings and heat to melting stage. Pour warm ingredients into hash browns and add Cream of Wheat and chopped corned beef. Add beaten eggs and pour into a greased 9X13 inch baking dish.


Put dish in preheated oven for 10 minutes, then turn down heat to 325 degrees for about an hour, or until brown crust appears. Sprinkle shredded cheese over top and serve hot with meal; leftovers can be sliced and fried for breakfast or brunch.
