One pot chicken

A healthier alternative to canned soup.
1 onion chopped
3 cloves garlic chopped
1 carrot chopped
2 Tablespoons Olive oil
4 chicken thighs
1 can Mexican style chopped tomatoes
2 cans low sodium low fat chicken broth
1 bunch kale torn into bite size pieces
Saute onion, carrot and garlic in olive oil then add the chicken, saute until no longer pink. Then add kale. cook for apprx. 5mins. Then add broth and tomatoes. Season with 1 teaspoon chilli powder, 1/2 teaspoon each of garic powder, onion powder and salt and pepper. Simmer on low for about 1 half hour.

mildly spicy, majorly flavorful!
I was looking for a chicken soup w/ kale as I had just bought some at the store. This recipe fit the bill. Easy to prepare. I would suggest ingredient portioning as an enhancement. I also added a half cup of spirelli to make it a little more filling. Was great w/ some fresh baked biscuits!
