One Pot Roast Dinner

If you don't have time you don't have to brown roast before cooking it in the oven. Sometimes I just throw it all in the roasting pan, cover it and put it in the oven and forget it until the timer goes off. It can even be done in a large slow cooker.
RECIPE INGREDIENTS
2-3 lb. lean beef roast
3 Tbsp. olive oil
8 small or 6 medium red potatoes, washed with peel
left on
4-6 small ears of corn on the cob
1 medium onion, chopped
1 1/2 cups sliced mushrooms
2 Tbsp. minced garlic
1 envelope Lipton's Beefy Onion soup mix
6 cups water
1 medium cabbage, quartered
1 tsp. each salt and pepper
DIRECTIONS
In large oven safe roasting pan over med-high heat on stove top, place oil and roast. Brown roast on each side; remove from heat. Place potatoes and corn in pan around roast. Combine contents of soup mix pouch,6 cups water, minced garlic, chopped onion,mushrooms, salt and pepper; stir together and pour around roast over vegetables. Place quartered cabbage over top of roast and vegetables and cover with lid or foil. Bake for 2-4 hours at 350* or until done and desired tenderness is reached.
