Orange Cranberry Scones
- 2 cups flour
- 1/4 cup sugar
- 3 tablespoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons butter
- 1/2 cup dried cranberries
- 1/2 cup orange juice
- I egg
- 2 tablespoons beaten eggs with 1 tablespoon half-and-half
Preheat the oven to 400 degrees F.
Mix the dry ingredients. Cut in the butter with a pastry blender. Add the cranberries. Mix the juice and 1 egg together. Add to the butter mixture until just combined. Knead about 10 times on a floured board. Cut into 2 pieces. Shape each piece into a round disk. Cut each disk into 6 wedges.
Brush the tops with the beaten egg mixture. Bake about 20 minutes or until golden.
