A little sweet, a little spicy and full of juicy flavor, these drumsticks make great party food. If you prefer more bite to your spice, add a dash or two of hot sauce to the glaze.
- 3/4 cup orange marmalade
- 1 tablespoon honey (orange blossom if available)
- 1/2 teaspoon red chili flakes
- 1 teaspoon freshly grated ginger
- Salt and freshly ground black pepper, to taste
- 12 chicken drumsticks (about 3 pounds)
- 1/4 cup chopped cilantro, to garnish
Preheat your grill to medium OR preheat your oven to 400 degrees F.
In a small saucepan over medium heat, warm the marmalade, honey, chili flakes and ginger. Bring to a simmer, stirring, and set aside.
Season the drumsticks with salt and pepper, rubbing the seasoning carefully underneath the skin without tearing it.
To grill: Oil the grill grates. Grill 25 to 30 minutes until skin is crisp and juices run clear. (An instant read thermometer inserted in the thickest part of the drumstick should read 165 degrees F.) Brush with glaze during the last 3 minutes of cooking on the grill.
To bake: Line a baking sheet with foil. Grease the foil with oil then place the sheet in the oven for 30 to 35 minutes. Brush with glaze during the last or the last 10 minutes if in the oven.
Sprinkle with cilantro and serve.
