This tasty recipe will surely become one of your favorites.
- For the Orange Sweet Potato Rolls:
- 2 organic sweet potatoes
- 1 (1/4 ounce) package active dry yeast
- 1/2 cup warm water (110 degrees F)
- 5 tablespoons brown sugar
- Zest of one orange
- 4 tablespoons Wild Oats Unsalted Butter, softened
- 1 teaspoon salt
- 2 Wild Oats Large Eggs, slightly beaten
- 3 cups unbleached organic flour plus 1/2 cup for kneading
- For the Cinnamon Orange Honey Butter:
- 2 sticks Wild Oats Organic Unsalted Butter, softened
- 3 tablespoons Cinnamon
- 1/8 cup honey
- Juice of one orange
FOR THE ORANGE SWEET POTATO ROLL:
Peel and cut sweet potatoes into small chunks. Place in a saucepan, cover with water and bring to a boil. Simmer until very soft (about 10 minutes). Drain and mash until smooth. In a large bowl, dissolve the yeast in the water. Stir in a tablespoon of sugar and let sit for 5 minutes. Add the sweet potatoes, orange zest, butter, salt, eggs and the rest of the sugar. Mix well. Mix in flour and place dough onto a lightly floured surface. Knead for 3 to 4 minutes, adding enough flour to prevent sticking. Form into a ball and place in an oiled bowl. Cover and let rise for 1 1/2 hours or until doubled in size. Punch down and let rest for 3 minutes. Shape into 20 balls and place in a buttered baking pan/sheet. Cover and allow to rise until doubled in size. Bake at 375 degrees F for 15 minutes. Serve hot with cinnamon orange honey butter.
FOR THE CINNAMON ORANGE HONEY BUTTER:
In a small bowl mix all the ingredients together. Shape into a ball and place in a decorative bowl.
