Makes about 3 dozen


  • Nonstick vegetable oil cooking spray
  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 5 tablespoons unsalted butter, melted
  • 2 large egg whites, beaten to blend
  • 2 teaspoons orange zest
  • 1/2 teaspoon vanilla extract


Preheat oven to 350 degrees F. Spray large baking sheet with vegetable oil spray.

Place sugar and flour in large bowl. Mix in butter, egg white, orange peel and vanilla. Make 6 cookies by spooning 1 teaspoonful batter for each onto prepared baking sheet, spacing 4 inches apart. Using small off-set spatula, spread each to 2-inch round.

Bake cookies until golden around edges, about 8 minutes. Working quickly, run thin metal spatula around edges of cookies to loosen. Drape each cookie around handle of wooden spoon to shape cookies. Transfer cookies to rack. Repeat with remaining batter, spraying baking sheet with vegetable oil spray between batches. Cool before using.

DO-AHEAD TIP: Can be prepared 3 days ahead. Store at room temperature in airtight container.
