Oriental-Style Stir-Fried Vegetables

Makes 4 servings
- 1 tablespoon sesame oil
- 1 medium onion, sliced
- 3 slices fresh ginger root
- 2 cloves garlic, cut in half
- 4 cups broccoli flowerets
- 2 carrots, thinly sliced on the diagonal
- 1 red bell pepper, cut into strips
- 2 cups snow peas
- 3 tablespoons teriyaki or soy sauce
Heat the oil in a large skillet or wok over medium-high heat. Add the onion, ginger root and garlic. Cook, stirring often, for 2 minutes, or until the garlic is golden. Remove the ginger root and garlic and discard.
Add the broccoli, carrots and red pepper. Cook for 2 minutes, stirring often, until the broccoli and carrots are tender-crisp.
Add the snow peas and teriyaki or soy sauce. Stir to combine.
