This is the best Mud Pie recipe I've ever used.
1 cup Butter
8 oz Semi-Sweet Chocolate, coarsly chopped
1/2 cup Corn Syrup
4 large Eggs, beaten
1/2 cup Pecans, finely chopped
Whipped Cream, to serve
5 to 6 oz Graham Crackers
1/2 cup Pecans, finely chopped
1 Tbsp Light Brown Sugar
1/2 tsp ground Cinnamon
6 Tbsp Butter, melted
1. Preheat the oven to 350 degrees. Lightly grease 9in springform pan.

2. To make the crust, place graham crackers, pecans, sugar and cinnamon in food processor. Process only until fine crumbs are formed. Add the butter and process just until moisntened - DO NOT OVERPROCESS!

3. Press the cracker mixture over the bottom and about 1 1/2 inches up the side of the pan. Cover and chill until filling is ready.

4. To prepare the filling, put the butter, chocolate, corn syrup into a pan over low heat until melted and blended. Let cool, then beat in the eggs and pecans.

5. Pour filling into chilled crust, and smooth the surface. Bake for 30 minutes, or until just set but still soft in center. Let cool on a wire rack.

6. Serve at room temperature or chilled with whipped cream.

Been Looking for Thus Recipe for Over...
...10 years. Had it in Connecticut at a restaurant that would not give the recipe. Tried it and it is exactly what I was looking for. Thanks!
