Orzo Salad

A very tasty and low calorie alternative to potato salad and cole slaw.
2 red bell peppers
3 ears of sweet corn
1/4 C parsley (or cilantro)
1 jalepeno pepper
1 C cooked orzo pasta
3 T Extra Virgin Olive Oil
1/4 C chopped green onion
3 T white wine vinegar
1/2 t black pepper
1 minced garlic clove
1 medium red onion
1 t salt
1/4 C lime juice
Blacken the green pepper, corn and red onion on the grill. Remove the skins and seeds and chop into small pieces.

Mix blackened vegetables with cooked orzo and mix in dressing made of oil, garlic, jalepeno, green onion, vinegar and lime juice.

Let sit for a couple of hours and serve with grilled chicken, steak or fish. The salad is also good as a dip with Harvest Cheddar Sun Chips.

P.S. Add more jalepeno to personal taste.
