Overnight Finnish Pancake--Serves 4

As a past owner/innkeeper and present interim innkeeper, this was and still is one of my guests' favorites. It's such an easy dish to make, makes the house smell great, and looks elegant to serve. Can't beat that, can you!
5 Jumbo Eggs
1 Cup Milk
1/4 Cup Orange Juice
1/2 Cup Sugar
1 Cup Flour
1/2 Tsp. Baking Powder
1/2 Cup(1 cube) Sweet Butter
Powdered Sugar for Dusting At The End
The night before cooking this dish, place all of the ingredients except for the butter and powered sugar in a blender.

Process until well blended.

Put blender with mixture in the refrigerator overnight.

Next morning, preheat oven to 350 degrees and remove blender from the refrigerator.

Reprocess the batter until well blended.

Place butter in a 9 X 13-inch baking dish;put in hot oven on middle rack and let butter melt until it's sizzling but not real brown.(about 10 minutes)

Pour batter into the sizzling butter and bake for about 20 minutes or until all puffed and slightly browned.

Remove from oven, sprinkle with powdered sugar. Serve immediately.

It will look like a souffle at first and will fall, but still will be delicious. You can even reheat left overs in the micro the next day.

I serve this with fresh strawberries and/or syrup.

Additional note: You can substitute lemon juice for the orange juice. You also can add orange or lemon zest to batter.
