Pam's Carrot Bread

  2 loaves
1/4 cup olive oil ( I use orange infused oil)       3 cups all-purpose flour
3/4 cup light sour cream                                      1/2 teaspoon baking soda
3 eggs plus 3 egg whites                                       2 teaspoons baking powder
1 tablespoon vanilla extract                                 1/4 teaspoon salt
1 3/4 cup granulated sugar                                   2 teaspoons ground cinnamon
one apple peeled,cored and shredded
1/2 cup craisins, raisins or dried cherries
2 cups shredded carrots
preheat the oven to 350 degrees

Spray two loaf pans with nonstick baking spray with flour.

In a large mixing bowl, beat oil and sour cream with an electric mixer on medium speed.

Add sugar and beat well. Mix in eggs and egg whites one at a time

In a separate bowl, combine dry ingredients. Stir flour mixture into sugar mixture.

Gently fold in carrots, apple and craisins.

Pour batter into 2 loaf pans and bake for 50 to 60 minutes or until a wooden skewer

inserted in center comes out clean.

Cool pans on a wire rack for 20 minutes.

Remove bread from pans and cool completely on wire rack
