Pan Roasted Fondant Potatoes

These easy to prepare potatoes are delicious either as an appetizer or a side item for a protein of your choosing.
2 large hearty potatoes, washed, unpeeled
Olive oil
1 sprig of thyme
Chicken stock
1/4 stick butter
Coarse sea salt
Freshly ground black pepper
1. Cut potatoes in half length-wise

2. Liberally season cut sides of potatoes with sea salt and pepper

3. In an oven safe sautee pan, heat enough olive oil to cover the bottom of the pan until the oil starts to ripple and smoke slightly

4. Cook potatoes cut side down until golden brown, then flip on to skin side

5. Add the butter to the pan. (Do not worry about the butter burning, thanks to the olive oil.)

6. Add chicken stock to the pan until it just comes up the potatoes about a quarter of the way.

7.. Add the sprig of thyme to the pan and place the pan in the oven at 375 degrees F for 10-12 minutes or until a knife easily pierces the flesh of the potatoes.

8. Remove the thyme from the pan and serve the potatoes, either as an appetizer or side item.
