Pancake mix Strawberry Cupcake/Muffin hybrid

This is a very easy, versatile recipe that can go many different ways. The texture of the hybrid Muffin/cupcakes is amazing and moist.
RECIPE INGREDIENTS
2 cups pancake mix
1/2 tsp baking soda
Vanilla or Lemon extract
1/2 cup sugar (Less if you are going to frost them)
Fresh strawberries
DIRECTIONS
Preheat oven to 350 degrees


Mix up pancake batter following the instructions on the package (I use Krusteaz and use 2 cups of mix, 1 1/3 cup water and 2 tbsp oil)


Mix in a drop or 2 of vanilla or lemon extract, I've tried both and prefer the lemon. It goes great with the strawberry! Also mix in the sugar and baking soda.


Coat your cupcake pan with cooking spray or use the little cups, pour the batter into each one and drop a couple pieces of cut up strawberry on top each one.


Bake at 350 for 20 minutes, let them cool and enjoy! If you used a little less sugar they are great frosted.
