Passover Cheese Blintzes with Sauteed Apples

Passover is one of my most favorite holidays. It gives me a chance to use my imagination and ingredients to create interesting and tasty meals at Passover. My family enjoys blintzes all year long; now we can enjoy them at Passover, too!
3 eggs
3 T. Passover cake meal
3/4 c. cold water
8 oz. dry cottage cheese
4 oz. cream cheese
1 egg
1 T. sugar
1/2 t. salt
1/2 t. grated lemon rind
6 Granny Smith apples
1 T. lemon juice
4 T. butter or margarine
1 T. Passover potato starch
1/2 c. cold water
6 T. brown sugar, packed
1/2 t. cinnamon
1/4 t. nutmeg
Prepare crepes:

Beat 3 eggs slightly. Mix cake meal and water; add to eggs. Pour 3-4 T. batter in heated and greased small (6'-8') fry pan. When bottom of crepe is set and browned, turn out onto counter to cool. Continue making crepes until batter is used up.

Prepare filling:

Mix together until smooth the dry cottage cheese, cream cheese, egg, 1 T. sugar, 1/2 t. salt, and grated lemon peel.

Make blintzes:

Place a heaping teaspoon of filling onto the fried side of the crepe. Fold in sides, then fold in the top and bottom, forming an envelope. Brown blintzes in butter or margarine in a frying pan. Serve with Sauteed Apples.

Sauteed Appples:

Peel, core, and slice apples thin; toss sliced apples in lemon juice. Melt 4 T. butter or margarine in saucepan; add apples slices and saute just until tender, 5-8 minutes. Combine potato starch and water; add to apples. Stir in the brown sugar, cinnamon, and nutmeg. Reduce heat and simmer for 3-5 minutes. Serve over blintzes.

Makes about 8 blintzes.
