Makes 6 main-dish servings

In this traditional Greek dish, the white sauce firms up into a creamy, delicious layer, and the cinnamon adds exotic flavor.


  • For the Meat Sauce:
    1 pound ripe plum tomatoes or one 16-ounce can tomatoes, cut up
  • 1 pound lean ground chicken, turkey, or beef
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 8-ounce can tomato sauce
  • 1/4 cup chicken broth
  • 1 tablespoon red wine vinegar
  • 1 tablespoon chili powder
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground red pepper (optional)

  • For the Pasta:
    8 ounces elbow macaroni (2 cups)
  • 1 beaten egg
  • 1/4 cup grated Parmesan cheese

  • For the White Sauce:
    3 tablespoons margarine or butter
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon pepper
  • 1 1/2 cups milk
  • 1 beaten egg
  • 1/4 cup grated Parmesan cheese
  • Ground cinnamon (optional)


Peel, seed, and chop the fresh plum tomatoes, if using. In a large skillet, cook the ground chicken, turkey or beef, onion and garlic for 5 minutes, or till the meat is brown and the onion is tender. Drain off fat. Stir in the fresh or undrained canned tomatoes, tomato sauce, chicken broth, vinegar, chili powder, allspice, cinnamon, salt and, if desired, red pepper. Bring to a boil; reduce heat. Simmer, uncovered, for 15-20 minutes, or to desired consistency, stirring occasionally.

FOR PASTA: In a large saucepan or pasta pot, bring 3 quarts water to a boil. Add the pasta. Reduce heat slightly. Boil, uncovered, for about 10 minutes, or till al dente, stirring occasionally. (Or, cook according to package directions.) Immediately drain. Rinse with cold water. Drain again.

In a large mixing bowl, combine 1 beaten egg, 1/4 cup Parmesan cheese and the hot cooked macaroni. Set aside.

FOR WHITE SAUCE: In a medium saucepan, melt the margarine or butter. Stir in the flour and pepper. Add the milk all at once. Cook and stir till thickened and bubbly. Stir about half of the mixture into 1 beaten egg. Return the egg mixture to the saucepan. Stir in 1/4 cup Parmesan cheese.

TO ASSEMBLE: Layer half of the pasta mixture in a greased 2-quart square baking dish. Top with all of the meat sauce, the remaining pasta mixture, and all of the white sauce. If desired, sprinkle lightly with cinnamon.

Bake in a preheated 350 degrees F oven for 30 to 35 minutes, or till set. Let stand for 5 minutes before serving.
