  • For the Raspberry Sauce:
  • One (10-ounce) package frozen raspberries, thawed
  • 2 tablespoons sugar
  • 3 tablespoons raspberry liqueur (optional)

  • One (16-ounce) can halved peaches, well drained, or fresh pitted peaches, if available
  • 2 pints vanilla ice cream



Puree the raspberries and sugar in the container of a food processor. Add the liqueur and chill, or use immediately.

In a single-serving dish, place a half a peach, cut side up.

Top the peach with a scoop of vanilla ice cream and pour some of the raspberry sauce on top. Serve immediately.
