Makes 8 servings
- For the Raspberry Sauce:
- One (10-ounce) package frozen raspberries, thawed
- 2 tablespoons sugar
- 3 tablespoons raspberry liqueur (optional)
One (16-ounce) can halved peaches, well drained, or fresh pitted peaches, if available
- 2 pints vanilla ice cream
FOR THE SAUCE:
Puree the raspberries and sugar in the container of a food processor. Add the liqueur and chill, or use immediately.
In a single-serving dish, place a half a peach, cut side up.
Top the peach with a scoop of vanilla ice cream and pour some of the raspberry sauce on top. Serve immediately.
