Pear and Brie Crostini

  16 crostini
1 french baguette, sliced on a bias into 16 pieces
Olive oil
salt and pepper
8 thin slices of prosciutto, cut in half, so, you have 16 pieces
2 pears, ripe, sliced into 16 thin slices
apricot preserve
brie cheese, sliced into 16 thin slices
Make crostini by brushing the baguette slices with olive oil and placing in a 350 degree F. oven until lightly golden brown. Sprinkle with salt and pepper. Set aside to cool.

Once baguette is cooled, spread a this layer of apricot preserve on each crostini. Then, layer each slice as follows on top of apricot preserve:

Brie, then pear, then prosciutto. Dab a little dab of apricot preserve on top to decorate.
