- For Vegetables:
- 8 scallions or baby onions
- 4 garlic cloves
- 8 oz sugar snap peas
- 8 oz snow peas
- For Ham:
- 1 tablespoon olive oil
- 2 slices cooked ham, chopped
FOR VEGETABLES: Place scallions and garlic in cold water. Bring to a boil and boil gently for 1 minute. Drain and remove skins. Chop garlic into pieces. Bring a pot of water to a boil, add sugar snap peas, cook for 30 seconds, add snow peas and cook for another 30 seconds. Drain.
FOR HAM: Heat oil in a frying-pan, Add ham, scallions and garlic. Saute for 2 minutes.
TO SERVE: Toss peas, ham, garlic and scallions together and serve immediately.
