Pecan Baked Sweet Potatoes

I make this every Thanksgiving as an alternative to sweet potatoe pie. I use the spenda/brn sugar blend because it reduces the sugar content and I'm diabetic. This is a wonderful side dish for pork, chicken or turkey and reheats beautifully!
RECIPE INGREDIENTS
4 Large Sweet Potatoes
1 Stick of Butter
1 Cup of Brown Sugar/Spenda Blend (or just brown sugar)
1/2 Cup of chopped pecans
1/2 tbl spoon cinnamon
1/2 tbl spoon ground cloves
DIRECTIONS
Clean and slice sweet potatoes into 1/2 thick slices


Place in a casserole dish


In sauce pan, melt the butter and brown sugar mixture until disolved, add in the cinnamon & ground cloves


Pour this mixture evenly over the sweet potatoes


Cover with foil, Bake at 350 degrees for 30 minutes


Uncover and sprinkle with the chopped pecans


Return to oven, uncovered, for 10 minutes or until the pecans are toasted.
