Great pecan pie recipe! This is a recipe I found in an old Farmwives Cookbook from the 1940's. Best recipe I have ever found for Pecan Pie as it is not too sweet. Great for holidays and family gatherings.
1 C. Light Corn Syrup             Unbaked pie shell
1/2 C. Sugar                      1 C. Whole Pecans
3 Eggs
1/4 ts. salt
1-2 tsp vanilla
1/4 C. Melted Butter
In a stand mixer or hand mixer on medium speed, beat eggs until golden yellow. Continuing stirring and add light corn syrup, sugar, and salt. In the meantime, melt butter and let cool slightly. When the butter is cool enough add to sugar and egg mixture. Add vanilla after you stir in butter.

Pour 1 C. Pecans into the bottom of an unbaked pie shell, and then add syrup mixture. (or you can lay them in a cirucular fashion in the bottom of crust to make it look prettier)

Bake at 350 degree for 55-60 minutes until golden brown and center has set. Cooking time will vary with individual ovens.

To prevent crust from burning during cook time, the first half hour cover edges of crust with aluminum foil. Remove after half an hour to let edges of crut brown.
