1 jar of candied and pickled watermelon rinds
(Old South brand by Bryant Preserving Company)
I package of lean bacon
1 C of raw pecan halves
wooden toothpicks
Cut bacon slices in half. Wrap each bacon half around a watermelon rind and a pecan half. Secure with a wooden toothpick. (I usually cut the larger square rinds in half, as they are easier to wrap with the pecan half.) Arrange on a cookie sheet and bake them at 350 degrees, for approximately 20 minutes, or until the bacon looks well done, not fatty. You can easily make these up to two weeks in advance and then freeze. Do not thaw before baking, but they do not need to be frozen first. They are the hit of every party and we've been making them since 1958, my Dad's 30th birthday party. Enjoy this sweet and savoy delicacy!
