I am a vegan, and I love tempeh, but I usually just bbq it. I wanted to do something different that's healthy and light, and came up with this pineapple tempeh stirfry. It's absolutely delicious with just the right amount of sweet and savory.
1/2 cup cut up pineapple
3 big kale leaves, ripped into pieces
1/2 a medium onion, minced
2 cloves garlic, minced
1 ripe tomato, cut into small pieces and de-seeded
1/2 tablespoon of ginger spice
1/4 cup lite soysauce
8 oz block of tempeh
1 tablespoon of EVOO
Sautee garlic and onion on medium heat with EVOO until onions become slightly translucent (about 5 minutes).

Add tempeh and cook with onions and garlic til golden brown. Use a fork to break into smaller, bitesized pieces.

Add pineapple chunks and sprinkle with ginger. Add soysauce. Cook for 5 minutes.

Add tomatoes and kale, cook until kale is very wilted.
