Plank Roasted Sweet Potatoes with Spicy Apple Horseradish Glaze

- For the Glaze:
- 2 cups apple juice
- 2 tablespoons minced fresh ginger
- 1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
- 14 whole cloves
- 2 teaspoons prepared white horseradish
- 1/2 teaspoon dried crushed red pepper flakes
- For the Potatoes:
- 2 sweet potatoes or yams, peeled, cut into 3/4-inch pieces
- 1/2 teaspoon salt
Fresh tarragon sprigs
FOR THE GLAZE:
Combine first 6 ingredients in heavy medium saucepan. Simmer over medium heat until reduced to 1/4 cup. Cool glaze. Remove and discard cloves from glaze.
FOR THE POTATOES:
Position rack in upper third of oven and preheat to 400 degrees F. Place plank on rack in oven and preheat plank 15 minutes. Toss sweet potatoes with glaze and salt. Arrange sweet potatoes over preheated plank. Return to oven and roast until sweet potatoes are tender, about 40 minutes.
Transfer sweet potatoes to bowl. Garnish with fresh tarragon sprigs and serve.
