Pocket Mac Tatoes
4 Medium Tomatoes
About 1/2 Cup of Elbow or Shell Pasta (Whole Wheat if Preferred)
3 Slices of Turkey Bacon
1/2 Cup Green/or red bell pepper diced
1/2 Cup Small onion diced
1/2 Cup Broccoli Cut diced
1/2 cup of preferred cheese (Yellow cheddar)
Optional (add in ground sausage, beef, or ground turkey)
Dash of black Pepper
Dash of cayenne
Optional (salt of desired)
Preheat oven to 350

Boil water in pot & cook pasta until al dente'

Meanwhile, saute meat until slightly brown

Add a pinch of pepper & basil

Add onion, pepper, & broccoli until softened

Drain pasta, and combine pasta and veggies in same pot

Stir in (preferred) cheese, and spices (pepper, cayenne, etc)

If the mixture seems dry or sticky, mix in fat free half and half (heavy cream, butter, whichever you prefer)

stir mixture on low heat until thickened

Arrange medium tomatoes on pam sprayed baking sheet

with tops cut off, and insides scooped out so just the shell of tomato is left

OPTIONAL- You can use insides of tomatoes in pasta mixture

Scoop pasta mixture into tomatoes

Bake at 350 for 20-25 minutes or until tomato has softened

5 minutes before they're done, you can top with Parmesan cheese or cheddar cheese!
