Pooka fairies haunt nights. On bad days they name call, luring u outside to be kidnapped. They wreak mayhem tumbling rural fences and spooking animals, and wreck ships leaving rocky coasts. Pookas love roasted spud spears dusted green with parsely flakes!
7 baking potatoes with skin on, washed and sliced into spears
7 tsp. extra virgin olive oil
1 tsp. paprika
1 tsp. coarse black pepper, to be freshly ground
1 tsp. sea salt, to be freshly ground
3 Tbsp. fresh parsley, chopped finely
Parchment paper
---Line cookie sheet with parchment paper. Preheat oven

to 325 degrees.

---Stir well in large bowl the potato spears to coat with olive oil, and place in single layer on parchment paper.

---Sprinkle with paprika and then grind salt and pepper

over potato spears.

---Bake for 15 minutes, then remove from over, turn over to sprinkle with paprika before grinding salt and pepper.

---Return to oven and bake another 20 minutes.

---Sprinkle baked spears liberally with freshly chopped parsley before serving hot.

MAKES 8 servings.
