Pork Chops 'Jubilee'

RECIPE INGREDIENTS
Four bone in 3/4 inch thick pork loin chops
One medium red onion, thin sliced
1/2 pound pitted fresh dark cherries
2 cloves mashed garlic
One finely sliced small Jalapeno pepper
2 TBsp balsamic vinegar
1 TBsp honey
2 TBsp peanut oil
Salt, pepper and flour
DIRECTIONS
Bring chops to room temperature, salt lightly.


Dust with flour, brown lightly, remove and keep warm.


In remaining oil, over medium or medium low heat


saute onion, garlic and pepper until translucent and soft.


Addbalsamic vinegar and cherries, pepper to taste.


Return chops, spooning sauce over, cover and simmer 12 to 15 minutes.


Serve with choice of starch and green vegetable.
