This is a recipe from my Mother
1 lb. pork sirloin, sliced in cubes about 2x2 inches
2 tbsp.white vinegar
5 tbsp. soy sauce
2 tbsp. brown sugar
2 cups water
3 cloves garlic, chopped
1 onion, minced
2 pcs. bay leaf
dash of pepper
dash of chili powder (optional)
1/2 tsp. salt
4 tbsp. oil for stir frying
1. Marinate pork in vinegar and soy sauce for 30 minutes.

2. In a pan, heat oil in medium setting and stir fry garlic and onions a few seconds. Add sugar and stir quickly to avoid burning.

3. Pour the marinated pork meat including the juice of the marinade into the pan. Add water. bay leaves and pepper. Cover and simmer for 15 to 20 minutes in medium heat. Check the consistency of the sauce from time to time Make sure that the sauce will not burn or dry up. If its dry add a little water and simmer for a few seconds. Turn off heat. Remove from fire.

Note: Serve with steam or fried rice
