Pork Loin chop with Spinich and Ham with wild mushroom sauce

Perfect recipe for a no carb diet!
RECIPE INGREDIENTS
4 Pork Loin Chops
8 slices deli ham
1 cup mozzarella cheese
2 cups raw spinach (not packed)
1T olive oil
1 cup low sodium beef broth
2 T dried minced onion
2 c sliced mushrooms
1/4 c half n half
1 T Gravy Master
DIRECTIONS
Heat oil in skillet and pound pork chops until they are a little


more than 1/4 in thick. Trim excess fat and sauté.


Once


pork is cooked, put aside on broiling pan and remove any


fat from the juices in pan.


Place ham in pan and lightly fry,


remove and place 2 slices each on top of pork.


Steam spinach


until soft approx. 1 1/2min in microwave on high. Drain


and place on top of ham slices.


Cover each stuffed pork


chop with 1/4c Mozzarella cheese and place in broiler until


melted.


Add 1/2 cup of beef broth, minced onion, and mushrooms


and cook down until mushrooms are soft. Add remaining


broth and Gravy master and heat to a boil. Add half n half,


boil one minute and remove from heat.


Remove chops from


oven and pour sauce over each chop. Can add salt n pepper


to taste.
