Enjoy guilt-free flavor with these simple Pork Tenderloin Sliders with Goat Cheese-Basil Sauce. They’re lean, tender and sure to be a crowd favorite.

ingredients

  • 1 pork tenderloin (1 pound), trimmed
  • 1 teaspoon salt-free seasoning
  • 2 teaspoons olive oil
  • 12 mini rolls, (1 1/2 x 2 inches), split and toasted
  • 6 romaine leaves, torn
  • 2 plum tomatoes, each cut into 6 slices

  • For the Goat-Cheese Basil Sauce:
  • 4 ounces soft goat cheese, at room temperature (1/2 cup)
  • 1 tablespoon fresh basil, chopped
  • 1 small clove garlic, minced
  • 1 teaspoon lemon juice
  • Pinch black pepper

Cut the pork about 1/2-inch thick. Sprinkle the pork on all sides with the seasoning. Heat the oil in a large heavy skillet over medium-high heat. Add the pork and cook, turning once, until the pork is browned, about 1 1/2 minutes on each side.

FOR THE GOAT-CHEESE BASIL SAUCE: Stir together all the ingredients in a small bowl.

Place the tenderloin in the rolls, top with the lettuce and tomatoes and serve with Goat Cheese-Basil Sauce or sauce of your choice.
