Port Arrabbiatta with Penne Pasta

Hearty Italian recipe goes well with a crusty Tuscany bread and a robust red Italian wine
1  1-lb. pork tenderloin sliced 1/4 inch thick
1 T. Olive oil
1 red pepper sliced into thin strips
1 onion sliced thin
1 lb sliced mushrooms
1 teaspoon thyme
1 jar (good quality) arrabbiatta sauce
1/4 cup dry red wine
salt and pepper to taste
Penne Pasta
Heat olive oil in a 12 inch skillet over medium high heat;

Brown pork tenderloin slices (3 to 4 minutes)remove from skillet set aside;

Saute red pepper, onion and mushrooms (2 minutes);

Add arrabbiatta sauce, red wine, thyme, salt and pepper; Return pork tenderloin slices to skillet;

Bring mixture to slight boil;

Cover and simmer 15 minutes;

Serve over cooked penne pasta;
