Potato Cheese Soup

Mashed potatoes cheese soup. Simply potatoes' traditional mashed potatoes, mozzarella cheese and milk. Simply seasoned with salt and pepper. On top, added some greens, minced scallions since the theme is St.Patrick's Day.
1 cup Simply Potatoes Traditional Mashed Potatoes
1/2 Medium Onion, thinly sliced
1/2 cup Milk
2 cups Water
1 cube Vegetable Bouillon
1/2 cup Shredded Mozzarella Cheese
1/2tablespoon Butter
2 tablespoons Minced Scallions
1.In a sauce pan, heat butter and sauté onions until tender. Add water and vegetable bouillon. Bring to boil.

2.Add mashed potatoes, reduce heat and simmer about for 5 minutes.

3.Add shredded mozzarella cheese, season with salt and pepper. Simmer until cheese is melted.

4.Pour the soup into the serving bowl, put 1/2 tablespoons minced scallions on top.
