Potato Mushroom Cheese Casserole

The combination of mushrooms, onions and garlic with the cheese and potatoes is irresistible.
4 TBS. butter or canola oil
1/2 lb. sliced mushrooms
1 large onion (preferably sweet), finely chopped
1 garlic clove, minced
1 TBS. dried parsley
dash of red pepper
1/4 cup grated parmesan cheese
1 1/2 cups grated cheddar cheese
1 pkg Simply Potatoes (sliced or diced) or 2 1/2 cups of sliced, pan fried potatoes
Seasoned bread crumbs
1. Preheat oven to 350 degrees F. Grease 13x9 inch baking dish.

2. Melt 3 TBS. butter in large frying pan on medium heat. Add mushrooms, onions and garlic, and saute for about three minutes. Stir in seasonings.

3. In separate bowl, combine cheeses and potatoes, then spread half the mixture in a 13 x 9 inch greased baking pan.

4. Carefully spread half the mushroom mixture on top; then add the remaining potato-cheese mixture followed by the remaining mushroom mixture.

5. Sprinkle bread crumbs on top and dot with 1 TBS butter.

6. Cover pan and bake for 35 minutes. Remove cover and bake another 10 to 15 minutes until top of casserole is golden brown and bubbly. Serves 6 to 8.
