Potatoe crusted Quiche
6 Eggs
1/2 cup milk
1 cup shredded cheese (your choice)
1/2 cup bacon or ham (crumbled bacon or diced ham)
1/4 cup chopped green onion (optional)
1/4 cup chopped red pepper (optional)
I package of simply potatoes shredded
Fry potatoes in skillet with oil til almost done. Meanwhile beat eggs and milk together, season to your liking with salt and pepper. Remove potatoes from skillet and line bottom and sides of pie plate that has been sprayed with nonstick cooking spray. Pour egg mixture on top of potatoes, sprinkle in meat of your choice, green onion, red pepper, and cheese reserve 1/3 cup.

Bake at 350 for 30-35 minutes until egg mixture is firm. Remove from oven and sprinkle remaining cheese on top. Return to oven to melt cheese.

Cut into pie slices and serve with fresh fruit. Enjoy!
