Puff Pancake (aka German Pancake)
Can be topped with just about anything. Powdered sugar, apples sautéed in butter, brown sugar and cinnamon or fresh fruit.
- 4 tablespoons butter
- 4 eggs
- 1 cup milk
- 1 teaspoon almond extract
- 1 teaspoon grated lemon zest
- 1 cup flour
Preheat the oven to 425 degrees F.
Melt the butter in a 9-inch glass pie dish in the oven as it is being preheated.
Combine the eggs, milk, extract and lemon zest in a blender; blend until well combined. Add the flour quickly, 1/3 cup at a time, blending just until combined. Pour into the waiting pie plate in which the butter is very hot. Bake at 425 degrees F for approximately 20 minutes.
