It is very important to note that no substitutions or eliminations can be made in this recipe. All ingredients are as is.
4 eggs
1 2/3 cup sugar
1 cup vegetable oil
1 can (16 oz.) pumpkin
2 cups all-purpose flour
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 pkg. (3 oz.) cream cheese softened
2 cups confectioner's sugar
1/4 c. butter, room temperature
1 tsp. vanilla
1-2 tablespoons milk
Preheat oven to 350F.

In mixing bowl, beat eggs, sugar, oil & pumpkin. Combine flour, cinnamon, baking powder, baking soda & salt. Gradually add to pumpkin mixture and mix until well blended. Pour into a 9 x 13 x 3' pan sprayed with baking vegetable spray & bake at 350F for 30 minutes. After 30 minutes test cake to see if done, if still gooey, bake another 5 minutes & test again).

Cool in pan.

Mix all icing ingredients until consistency desired & frost cake. (Can double icing recipe if desired)

These are great. Very easy to make, if you cook them just right they are very moist.
